Hotel New Nagasaki Terrace Restaurant "Hydrenja" Chef / 19th year living in Nagasaki City
1982Born in Nagasaki City. He grew up around Shindaiku-cho and Tateyama-cho, attended junior high school in Sasebo city, high school in Nagasaki city, and went on to university in Hiroshima. After that, he made a U-turn and learned the basics of cooking at Kyushu Culinary College, and then joined Hotel New Nagasaki. After working at a banquet hall, he was assigned to the terrace restaurant "Hydrenja". In 2021, he became the head chef and continues to this day.

It's a great honor, but I still have a long way to go as a chef. By participating in the competition and experiencing first-hand the abilities of chefs who are active at the forefront of the world, I felt that I wanted to further improve my skills. I became the head chef of "Hydrenja" in 2021, and I value teamwork with the staff.
We are conscious of creating dishes that will please a wide range of customers and are not too difficult to approach as French cuisine. We hope you enjoy a luxurious time while traveling.
As a child, I grew up in the Kaminagasaki area, and Shindaiku Shopping Street was like my own garden. Even now, the pizza at the long-established Italian restaurant on the second floor at the top of the stairs is an unforgettable taste. I went to junior high school in Sasebo City, but returned to Nagasaki City for high school. He then moved to Hiroshima Prefecture for further education. Even in my private life, I like noodle gourmet food, which may be because I have such childhood memories.
Nagasaki City has a rugged topography, and the sunrises and sunsets are very beautiful. Even now, I find myself wanting to take pictures with my smartphone.
