I've been eating Nagasaki Champon for over 20 years. I was doing interviews every year for guidebooks and publishing a book about Champon, and before I knew it, people from both inside and outside the prefecture were frequently asking me, ``Which Champon do you recommend?'' So, my personal response is to ask the customer, ``Which do you prefer, strong or light?'' and then introduce the restaurant to them. Most restaurants use a blend of chicken bones and pork bones, but the taste varies depending on the proportions and the way the soup is prepared.
