A grouper battle that has been going on since the Edo period, where you cut off your opponent's grouper.

In Nagasaki, kites are called ``Hata'', and Hata-age is one of Nagasaki's three major festivals, along with Nagasaki Kunchi and Shoro Nagashi.

Grouper-age in Nagasaki differs from other regions in that it is not a grouper that is fried high, but rather a grouper battle in which the grouper fights with other groupers and cuts the threads of the other grouper. Therefore, the grouper has a diamond shape made by combining two bones in a criss-cross pattern, with a 2-hiro (approximately 1 m) long ridge that connects to a single strand, allowing it to be controlled freely. The thread used for this interplay is called ``Bidro Yoma,'' which is made by gluing glass powder and applying it to hemp thread. Depending on the size of the grouper, a 1.6 to 1m long bead is attached, and this is used to cut the bead of the opponent's grouper and drop the grouper.

This fried grouper, which is said to have originated around the end of the 18th century, seems to have been introduced in the mid-15th century from the Tang Dynasty, the Netherlands, and (Indonesians who were attendants of the Dutch), and the pattern is also three-colored: white, blue, and red. Many of them are simple designs, such as those designed after ship flags or signal flags. Each piece has a name, such as "stone pavement," "plover in the waves," and "turtle shell," and it is said that there are between 3 and 200 different types, but currently about 300 types are created as traditional designs. Masu.

The grouper frying competition is held from April to early May. It is held in the mountains that surround the city of Nagasaki, such as Mt. Kazutashira, Mt. Karahakkei, Mt. Konpira, and Mt. Inasa. Karahakkei's grouper frying is especially spectacular, and there are events that the whole family can enjoy, such as grouper battles and parent-child grouper frying classes.
