"Learn about Nagasaki's classic gourmet food! Learn from a professional chef! Seminar on responding to diverse food cultures such as vegan and halal *Tasting included" will be held


We hold seminars with food that can also be used for international conferences.

The Nagasaki Convention and Visitors Bureau (DMO NAGASAKI) will be holding a seminar to learn how to accommodate diverse food cultures around the world, including vegan and halal.

An international conference with 11 to 1,500 participants is scheduled to be held at Dejima Messe Nagasaki in November of this year, and it will be necessary to respond to the diverse food cultures of hundreds of meals. With a view to attracting and hosting similar conferences and conventions in the future, we have decided to hold a seminar inviting a leading expert on responding to food diversity.

This seminar is designed to provide a wide range of learning opportunities, from basic content for business operators who want to learn how to respond to diverse food cultures, to practical content for business operators who are already responding and want to further improve their menus.

In particular, the practical portion of the event will feature special guest lecturer Chef Kusumoto from Jiyugaoka Saido, known as the world's best vegan restaurant, who will provide commentary and explanations, including tastings, on how to adapt Nagasaki's representative delicacies, such as Nagasaki Champon and Sara Udon, to diverse food cultures.

We welcome participation from people working in the tourism and food service industries, as well as those with an interest in multicultural coexistence.

Graduated from Chiba University. After traveling around the world in 2006, he joined Rakuten, Inc. in 2007. In 2014, he founded Food Diversity Co., Ltd. to disseminate information about restaurants that cater to diverse food cultures. In business areas such as vegetarian, vegan, halal, kosher, gluten-free, and allergies, he works with local governments and administrations nationwide to give lectures to promote the industry and disseminate information to attract customers. In 2020, he directly proposed food-related policies to Prime Minister Suga at the Tourism Strategy Implementation Promotion Council held at the Prime Minister's Official Residence.

Katsumi Kusumoto

Born in Okayama Prefecture in 1975. After graduating from a culinary school, he gained experience in French cuisine at hotels and restaurants in Tokyo, but was attracted by the delicate flavors and switched to Japanese cuisine. He further honed his skills at several Japanese restaurants, established his own style incorporating French elements, and in 2010 he was hired as the head chef of a members-only Japanese restaurant in Tokyo, where he served as the owner for nine years. In February 9, he joined Funfair Co., Ltd. and was in charge of cooking and menu supervision for the vegan restaurant "Saido". Since opening, the restaurant has been attracting a constant stream of inbound customers from all over the world, and it was ranked number one in the world on "HappyCow," the restaurant information site most used by vegans and vegetarians around the world. At the gourmet festival "Tokyo Tokyo Delicious Museum" to be held in May 2019, he will attend the opening ceremony on behalf of the participating chefs along with Tokyo Governor Yuriko Koike. In January 2, he will open a pop-up restaurant at Japan House Los Angeles, an external outreach hub established by the Ministry of Foreign Affairs. He is active both domestically and internationally in order to realize food diversity, including vegans, religions, and food allergies. He will be appointed as a Tokyo Tourism Ambassador from February 1.
